We've always tried to eat healthy in our house - lots of fruits and veggies and mostly healthy snacks and meals, but also splurged and ate out a little too often. Lately, we've cracked down and made the decision to step up our healthy game and try to recreate some of our really unhealthy favorites. This alternative to our favorite double-decker burger was a huge hit with the whole family! You can serve this salad with toasted burger buns on the side too.
Ingredients:
Ground beef, cooked and fat drained off
Salad mix or lettuce, cut and rinsed
Dill pickles, diced
Onion, diced
Shredded cheddar cheese
Thousand Island Dressing, we used a lower fat/lite version
Directions:
- Divide lettuce into bowls for each person/serving.
- Top lettuce with ground beef, pickles, onion and cheddar cheese.
- Drizzle with dressing.
- Serve immediately.
