Easy Quesadilla

You may know this as a popular queso dip, but we use it to fill flour tortillas for an Easy Quesadilla Dinner.

Ingredients:

  • 1 pound sausage (we prefer "hot")
  • 1 10-ounce can diced tomatoes with green chilies (drained)
  • 16 ounces Velveeta
  • 8 16-inch flour tortillas
  • Olive oil

Directions:

  1. Cube Velveeta into one-inch squares. Place in the microwave to melt. (I generally put it in for 2 minutes, take it out and stir it and put it back in for another 2 minutes. Continue doing this until it's melted, but still a bit firm.)
  2. While melting the Velveeta, place the sausage in a frying pan and brown it. Crumble the sausage as it cooks.
  3. Drain the fat from the sausage.
  4. Mix the sausage and can of diced tomatoes and green chilies into the melted cheese.
  5. Let sit until the cheese is a bit firm. To speed this up, place it in the fridge. (We do this so the cheese doesn't ooze out of the Quesadillas while frying them.)
  6. Brush one side of a tortilla with olive oil and place it in the frying pan on the stove on low heat.
  7. Scoop the firm cheese and place in the middle of the tortilla. Spread it around, leaving about 1/2 inch around the outside of the tortilla without the spread.
  8. Place a second tortilla on top and brush it with olive oil.
  9. Grill on low until the bottom tortilla browns.
  10. Flip and brown the other side of the tortilla.
  11. Remove from skillet.
  12. Let sit a minute.
  13. Cut with a pizza wheel and serve with sour cream, guacamole, and salsa or pico de gallo. Repeat for remaining tortillas.

Makes 4 Quesadillas

You can substitute chicken (ground or cubed) or ground beef for the sausage and Velveeta's Queso Blanco for the traditional Velveeta.
