Everyone's Favorite Microwave Potatoes

With school, sports and homework on the agenda now, I thought I'd share my "go to" potato recipe. This little number has made meal time a breeze. Aside from being a snap to prepare, it makes my favorite list for three reasons. 

  1. I've never met anyone who didn't like it.
  2. Leftovers are terrific.
  3. It's prepared and served in the same bowl (fewer dishes makes me very happy!).

So, without further ado...


Ingredients

  • 6-7 medium to large potatoes (any kind is fine)
  • 1-2 onions (white, yellow, red, whatever...)
  • 6-8 tablespoons butter
  • salt and pepper


Instructions

  1. Scrub and slice potatoes. Peel and slice onion.
  2. Layer potatoes, onion, salt and pepper and butter in a microwave safe bowl.
  3. Cover with plastic wrap/paper towel, etc.
  4. Microwave on high for 5 minutes, stir. Cover again.
  5. Microwave on high for 5 minutes, stir. Cover again.
  6. Microwave on high for 5 minutes, stir. Serve.

That's it! Total cook time is 15 minutes. Stirring every 5 minutes is a must.
