With school, sports and homework on the agenda now, I thought I'd share my "go to" potato recipe. This little number has made meal time a breeze. Aside from being a snap to prepare, it makes my favorite list for three reasons.
- I've never met anyone who didn't like it.
- Leftovers are terrific.
- It's prepared and served in the same bowl (fewer dishes makes me very happy!).
So, without further ado...
Ingredients
- 6-7 medium to large potatoes (any kind is fine)
- 1-2 onions (white, yellow, red, whatever...)
- 6-8 tablespoons butter
- salt and pepper
Instructions
- Scrub and slice potatoes. Peel and slice onion.
- Layer potatoes, onion, salt and pepper and butter in a microwave safe bowl.
- Cover with plastic wrap/paper towel, etc.
- Microwave on high for 5 minutes, stir. Cover again.
- Microwave on high for 5 minutes, stir. Cover again.
- Microwave on high for 5 minutes, stir. Serve.
That's it! Total cook time is 15 minutes. Stirring every 5 minutes is a must.
