Easiest Ever BBQ Pulled Pork

I woke up this past Sunday morning thinking about how I didn't want to cook dinner, didn't have much left in the fridge since I usually shop on Mondays, and that I wanted to use up some veggies from our CSA. Inspiration hit when I remembered a pork shoulder Boston butt I had bought on sale a few weeks ago. Mmmmm, how about BBQ pulled pork, with carrots and mashed potatoes?! Yessssss.

Problem though. That butt was frozen... solid. And we had places to be in fifteen minutes. What to do? Could I maybe, possibly, throw it in the slow cooker frozen?! Turns out (via super quick internet research session) you CAN! So I popped that ice cube into my cooker, added some leftover chicken stock and hit go! I did not add ANY sauce or seasonings or anything (mostly because I, like many of you, am the proud mama of a Super Picky-pants and sauce is guaranteed food doom).

When we got home, I peeled and threw in the carrots from our farm box. And then at dinner time... oh my. There was pulled-pork heaven ready for sauce (or ketchup) of choice. To complete the meal, I made mashed potatoes with some leftover half-and-half (can you tell I like to use up ingredients?). Delish.

So, if you'd like to try this, here's how.

Step 1. Put frozen butt in slow cooker, fat side up, and add some chicken stock.

Step 2. Turn the slow cooker on.

Done. I cooked it on low for about 9 hours. Here's my block of frozen meat before it was magically transformed into fall-off-the-bone pulled pork yumminess.
