Cookie Ice Cream Sandwiches

These semi-homemade cookie ice cream sandwiches are a great treat for summer and are sure to be loved by all. Make theses as a surprise for your kiddos or turn this into a fun, family, edible "art project"! Experiment with different cookie and ice cream flavors for a one-of-a-kind dessert!

Ingredients:
Cookies of your choice, 2 for each sandwich you want to make
Ice cream
Chocolate chips, optional
Sprinkles, optional
Plastic wrap

Directions:

  1. Place a square of plastic wrap on a plate.
  2. Put two cookies on the plastic wrap.
  3. Top one cookie with a small scoop of ice cream and place the second cookie on top of the ice cream.
                                          
  4. Roll sandwich in chocolate chips or sprinkles, if desired, and place back on plastic wrap.
  5. Wrap ice cream sandwich tightly with plastic wrap.
  6. Repeat above steps for each ice cream sandwich that you would like to make.
  7. Place all ice cream sandwiches in the freezer for 2-3 hours or until ready to enjoy.
